Mumma’s Homemade Tzatziki

When it comes to food, like so many other people I am completely lost when it comes to figuring out what to eat. Paleo, vegan, keto, vegetarian, the list just goes on. For the moment, what I have settled on are foods that are easy to make, are yummy, that I can sneak some greens into, and that I can share with others. This homemade tzatziki ticks all of these boxes.

In our household, for some reason we call each other Mamma and Pappa which may sound totally WRONG but it’s because we are parents of three cats so it just ended up that way ha-ha (does anyone else do this?). As two working cat parents, we are always trying to find balance and one of the best ways we have found to do this is with simple AF recipes. So without further ado, here is Mumma’s homemade tzatziki.

Ingredients

1 cup of greek yoghurt (could try soy or coconut yoghurt for a vegan option)

1 cucumber

1 teaspoon of fresh dill

1/2 a lemon

1 teaspoon of Himalayan sea salt

Instructions

Add one cup of greek yoghurt to a bowl and slowly add the chopped up fresh dill. I recommend tasting along the way to see how much you enjoy (I am a huge dill fan all the way so mine is quite strong).

Then add the lemon, again half a lemon is generous so you are more than welcome to start small but remember you can always balance it out with more salt down the track.

Add one teaspoon of salt but keep the salt on hand in case you want to add some more later

Then grate the cucumber directly into the bowl. Now some recipes say that you should squeeze the water out of the grated cucumber first but personally I don’t mind it this way. Again, a whole cucumber can be generous depending on it’s size so keep tasting along the way. Then stir like crazy until everything is mixed together.

And that’s it! For someone who has dedicated her whole website to thought, there isn’t much thought that goes into this one which is why I love it so much. And p.s. it is a crowd pleaser and goes so well with crackers or even as a replacement for tomato sauce.
